Peter Kaparos Peter Kaparos, Director of Banquets
Director of Banquets, Peter Kaparos has been at this property since the hotel was opened in 1987 as the Hotel Nikko. Peter has over 25 years with the Westin River North, from meetings to weddings Peter has seen it all and done it all. Peter’s favorite event to host at the Westin River North is a wedding, with family, friends, amazing food and plenty of beverages weddings are a celebration not too soon forgotten by our be-loved Director of Banquets. Peter has a refined attention to detail, compared to no other; his team executes events with professionalism and unparallel service.  Peter makes every Bride & Groom know just how special they are to us while being on hand throughout the entire wedding. Peter is in the National Association of Catering Executives and a member of the Catering Executives Club of America.
When Peter is not at the Westin you can find him spending time with his eight grandchildren and enjoying a delicious dinner of Lamb. Peter is the one VIP you don’t want to forget to include in your big day!

Camille Gale, Catering Sales Manager

Camille Gale received a Bachelor of Arts in Tourism Management from the University of Illinois Urbana-Champaign. Moving to Texas after college, Camille was able to discover and refine her catering experience at the InterContinental Dallas. Her corporate catering experience is coupled with her growing experience of working with a variety of different cultures and families on countless wedding. Her attentional to detail, organizational skills and passion to make every event special exemplifies and adds to her catering experience.  Camille recently married her college sweetheart and has a firsthand understanding of how important it is to feel comfortable with your catering manager as well as be confident in the success of your event. She looks forward to working and making your next event remarkable!

Dushyant Singh, Executive Chef
Growing up in New Delhi, India, Chef Dushyant Singh’s inspiration for the culinary arts began at a young age while enjoying his mother’s Northern Indian cuisine. His passion was further ignited upon studying hospitality management in India, which eventually led him to the Culinary Institute of America, Hyde Park, New York.  From there he continued his career working with prestigious hotels such as Paris Las Vegas, Hyatt Regency Scottsdale Resort & Spa, Waldorf Astoria Collection in Southern California, and The Wigwam Resort and Spa. Prior to joining us in 2012 , Singh was the Executive Sous Chef at Sheraton Wild Horse pass, home of Kai, the only five star five diamond restaurant in the state of Arizona. As the Executive Chef of the Westin Chicago River North, he will oversee the entire kitchen operation and food service for all hotel outlets. Chef Singh’s leadership ability and excellence in the field has earned him much recognition over the years. His journey and experience have expanded his culinary resumè with a diverse craft of myriad spices and bountiful flavors. His focus is to ensure each ingredient is justified and presented at its best.  Chef Singh’s very active in the community with local charity events, lending his leadership and skills whenever possible.
